It’s that time of year so I thought I’d suggest a new way to cook your Christmas turkey. You will need a steam oven and a conventional oven, or better still a combi steam oven.
After patting dry your turkey (4kg) rub with salt inside and out. Tie up with string if desired. Put on a wire rack with a solid pan underneath and steam at 85C for 40 minutes.
It won’t look very nice when you bring it out – rub with butter and return to dry heat 180c roast for 30 minutes- pour over your preferred glaze ( reglaze every 15 mins) and return to oven for another 1- 1 ½ hours.
Rest for 30 minutes with a sheet of baking paper and a teatowel over the top ( better than alfoil) and voila – Christmas Turkey
